Wiltes Seide came to America in 2009 from Haiti where he was born and raised and started a job at Newbridge in 2010 as a dishwasher. Wiltes wanted to get into cooking and the chef at the time felt he wasn’t ready to become a cook but rather urged him to go to culinary school and enhance his culinary experience. He graduated from Le Cordon Blue in 2012 with a certificate in culinary and then left Newbridge for a Prep Cook job at Davio’s Restaurant. 2 years later he moved to Legal Seafoods where he was a line cook. In 2023 he felt like it was time to return to Newbridge after spending some time at Boston College as a First cook and he was welcomed back with open arms. 14 months later after moving up the ladder, Wiltes is now the Junior Sous Chef in the Centro restaurant
If you know Newbridge, you know that our resident population includes some pretty amazing cooks. We’re excited to showcase our first resident recipe from Dorrit Senior. A little-known fact: Dorrit used to bake for a high-end restaurant owned by her son.
“My son called me one night and said ‘Mom, my baker isn’t working out. Can you just come in and bake a few desserts?’ I thought, ‘Why not?’ The rest is history! I baked their desserts for another five years,” said Dorrit.
“This recipe is from my cookbook I co-authored with Rolce Redard Payne named ‘Cooking with Fruit.’ I love stone fruits and we are almost in that season. Peaches of course are here now. This is one of my favorites and I hope you like it,” she said.
